Here. Rating system as per our last practice/meeting. One Rib. Quarter Rack. Half Rack. Full Rack.
ex. 1/Dinosaur’s Brisket is dry as a virgin in winter. One Rib.
ex. 2/Fette Sau’s Brisket was extremely moist and satisfying the other day. Half Rack plus One Rib. (Not sure if I can give a Full Rack. Is this the TS Holyland? Should this be a hard to accomplish rating?)
* Forgive the non-pork associations. We all still enjoy “The Other Meat”.
